Preface to the book, Food and Digestive Disorders I have a history of a digestive tract disorder from food allergic disease. For several years I knew that common staple foods injured me, sometimes in serious ways. I recall a slow development of digestive tract symptoms over many years. I eventually developed dermatitis herpetiformis which confirmed the association of my illnesses with immune responses to dietary gluten. As a result of my own experiences, I changed my medical practice, learned immunology, nutrition and skills of patient management that are required to guide patients toward major changes in diet and lifestyle.I can develop digestive tract disturbances any day I like. I just have to eat foods that I really enjoy eating, such as bread or pasta with cheese sauce. When my digestive tract malfunctions, I develop inflammatory activity in other parts of my body. Fortunately, I have the knowledge and self-discipline to maintain normal digestive tract function most days. I would hope to influence some of the 100 million people in Canada and the USA with digestive tract disorders to change their diets and regain comfort and health. The readers of this book will be intelligent, well motivated people who are empowered to make their own decisions and treat their own illnesses with diet revision. I have emphasized knowledge of specific digestive tract disease such as Celiac and Crohn’s disease and provide the essential information needed to self-manage these diseases effectively. At the same time, I want the long suffering reader who does not have a specific diagnosis to feel welcome and included in the discussions of digestive tract function, dysfunction and repair.
